This is the fruit of the coconut palm. The white, fleshy part of the seed is edible and used fresh or dried in cooking. The cavity is filled with coconut water which contains sugar, fiber, proteins, antioxidants, vitamins and minerals. Coconut water is a highly-nutritious food source. Coconut milk, the intesely caloric kathi comes from soaking grated coconut flesh in hot water for 15 minutes and straining the meat through muslin. The first straining yields the thicker and more fattening coconut cream used in many Thai desserts. The second straining produces a thin version for soups and curries.
